RAPID ROTI



I love baking my own bread but even I have to admit that sometimes I really can't be bothered with that slog of making the dough then proofing then knocking it out and proofing again and so on and so on. When you are too busy in the kitchen but still want to enjoy fresh bread why not try these roti. Great with curry dishes, all you need to do is make the dough, let it rest whilst you prepare your mail meal and then roll out and fry the roti. It may be simple, but the taste of that deliciously charred flat bread is up there with the best of them!

This recipe will give you 10 roti, ideal for feeding between 4-6 lucky people and any leftovers will keep for a few days wrapped in foil, ideal for taking to work for lunch with a tub of hummus.

Roti

300g Plain Flour
4 Tbsp Vegetable Oil
1 Tsp Salt

  1. Place all the ingredients in bowl and slowly start pouring in around 150ml of warm water in batches, mixing everything as you go until a dough ball forms that pulls away from the side of the bowl. You may not need all the water so don't be
    tempted to just chuck it all in at the start.
  2. Place the dough in a lightly floured bowl, cover with a damp tea towel and leave it to rest for at least 30 minutes.
  3. Once rested lightly oil a flat large griddle pan and heat the pan up to high. Take the dough and divide it roughly in half. You should then divide each half into 5 equal sized pieces.
  4. Roll out each piece on a lightly floured surface into a rough oval roti shape. Roll them out as flat as you can so that they still fit in the pan but don't break when picked up.
  5. One at a time, place the rolled out dough pieces into the pan and fry until the roti begins to puff up (roughly 1-2 minutes) before flipping over and frying the other side for a maximum of one minute. Remove from the pan and leave to one side.
  6. Repeat with the remaining roti dough pieces.
Don't stress about the dark charred pieces on the roti, this not only gives each one a beautiful BBQ taste but they also make them totally visually appealing as well. Just like you whipped them up in a giant stone roti oven like they do over in the east. 

Take your roti and get everyone to just help themselves and dig in! Use them to scoop up your curry and dips like the best set of edible cutlery you ever had.

From ingredients to plate in just over an hour, these rapid roti are prefect for the lazy bread maker!
