MATTYB'S BANANA BREAD BONANZA PART 3: TOTALLY TROPICAL



So you don't want fruit and nuts in your banana bread and you're not keen on popping chocolate chips in there (you nutter!), so what do you do. Well how about getting all tropical with your bad self and popping some coconut into the mix. Banana and coconut are very complimentary to each other so they make the perfect combination for many a bake. This is such a great way to use up your old bananas and desiccated coconut and once again you can get it prepared and baked in under 1 hour if you get your quick legs on.


As with my previous banana bread bonanza posts, this recipe will make enough for two 1lb loaf tin. Thats one to eat straight away and one to freeze and save for later. It's so simple to make that there is not much else to say about it really so lets get straight too it;

Coconut Banana Bread

200g Mashed Banana
2 Tbsp Semi Skimmed Milk
100g Softened Butter
150g Plain Flour
150g Golden Caster Sugar
1 Tsp Bicarbonate of Soda
1 Tsp Baking Powder
2 Whole Eggs
100g Desiccated Coconut
  1. Start by getting your oven toasty warm to 180 degrees (160 fan) and grease and line two 1lb loaf tins.
  2. Chuck the banana, milk, butter, flour, sugar, bicarb, baking powder and eggs into a large bowl and give everything a good beat until smooth and well combined. Add in the coconut and fold through until just evenly distributed.
  3. Divide the mixture between the two prepared loaf tins and place in the centre of your oven to bake for 40-45 minutes until golden brown and an inserted skewer comes out clean.
Remove the two loaves from the oven and leave them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. If you like, you can drizzle over some runny honey before sprinkling any left over desiccated coconut on top to add a final flourish to your banana bread. The coconut in this recipe, gives the banana bread a bit of crunch and chewiness which works brilliantly in contrast with the soft banana cake it lives in. Great with a cup of tea, a big Pina Colada or a swig of Malibu if you're a proper classy bird! A totally tropical taste sensation!
