CHICKEN "NOODLE DOODLE" SOUP



As I had two chickens brought home for me the other day (chicken based presents are the best!) I decided to go all out and not waste a thing so, I digged out my old chicken stock recipe and made a big batch of delicious stock which I then used to make some homemade chicken noodle soup (maybe I was inspired by seeing Fiddler On The Roof at the theatre over the weekend!). Making a soup right from scratch (stock and all!) is totally satisfying and you can really taste the difference compared to a shop bought version.


Chicken Noodle Soup


2 Finely Chopped Onions
4cm Piece of Grated Ginger
2 Grated Garlic Cloves
2 Peeled And Diced Carrots
2 Diced Celery Sticks
500ml Homemade Chicken Stock
Salt And Pepper To Season
Handfull Of Broken Spaghetti Pieces



  1. In a large, oiled stew pan on a medium heat, add in the onions, garlic and ginger and fry until the onions begin to soften before adding in the carrots and celery and frying for a further five minutes.
  2. Add in the stock, season with salt and pepper and bring to the boil before reducing to a simmer for 20 minutes until the carrots have softened.
  3. Add the broken spaghetti pieces and continue to simmer for the spaghetti's required cooking time.
It's as simple as that! It's amazing how such a quick and easy recipe can bring on such comforting feelings! For me there is nothing quite like a homemade soup to make you feel all warm and cosy inside. The intense chicken flavors that come from using a homemade stock are only boosted by the partnership of the ginger and garlic in the broth whilst all the fresh vegetables give the soup some body and oomph so that it's satisfying and filling as both a lunch or dinner time treat. Make sure you serve it with some warm bread so that you can mop up every oodle of this yummy chicken noodle doodle soup!
